Pyruvic acid (PA) is the simplest α-keto acid. It contains carboxylic acid and ketone functional groups, and it is the most critical intermediate formed during glucose metabolism. PA is colorless to light-colored and is easily polymerized or decomposed under light irradiation (Luo et al., 2020b; Peutzfeldt and Asmussen, 1990). PA is an important organic acid that plays a vital role during energy metabolism in living organisms and acts as an essential precursor during the synthesis of many organic compounds (Xu et al., 2008b). It has been widely used in the food, chemical, pharmaceutical, and agrochemical industry (Luo et al., 2019; Qin et al., 2011). In the food industry, PA has been used as a functional beverage additive and in diet foods. In the pharmaceutical industry, PA has been used as a substrate for the synthesis of L-tryptophan, L-tyrosine, L-DOPA, L-cysteine, L-leucine, vitamin B6, and vitamin B12. In addition, in the agrochemical industry, cereal protection agents and pesticides can also be synthesized using PA (Ichikawa et al., 1970; Kerber and Fernando, 2010).
